Instructions

Prepare the Citrus Base:

  1. Peel and slice the oranges into cubes. Arrange them on a large serving platter, covering the base.

Tuna Tartare:

  1. Dice the fresh tuna into small cubes. Place it in a bowl, drizzle with 2 tbsp of olive oil, and season lightly with salt and pepper. Set aside in the fridge to chill.

Add the Toppings:

  1. Scatter the sliced black olives, capers, and chopped chili pepper evenly over the orange slices.

Herb & Anchovy Layers:

  1. Sprinkle the chopped mint and parsley over the salad. Then place two anchovy fillets on top of each section of the salad.

Garnish with Roe:

  1. Add a small spoonful of lumpfish roe in the center of each portion, giving it that rich, luxurious touch.

Drizzle and Season:

  1. In a small bowl, whisk together the remaining olive oil (6 tbsp), balsamic vinegar, and oregano. Drizzle this dressing evenly over the entire salad.
  2. Add salt and pepper to taste, but remember the anchovies and capers are already salty!

Serve:

  1. Chill the salad in the fridge for about 10 minutes before serving, allowing the flavors to blend. Garnish with extra mint leaves if desired.
